Ramen is deeply rooted in tradition and Japanese culture — but NXXDS is something totally different.

Taking inspiration from all corners, we build noodle and dumpling dishes with ingredients, broths and garnishes pulled in from around the world: Mexican chillies in a birria beef ramen, Korean gochujang under pulled pork shoulder, a full veggie dashi that still hits every note.

We've got nothing but respect for traditional ramen. We're just not Japanese, and we're not going to pretend we are. Instead, we're pushing noodle and dumpling culture somewhere new — bold, borrowed, and built for sharing around the table.
